Did you know that endives are a very low-calorie vegetable - with only 15 kcal per 100 g? This means you can eat as many as you want when you're on a diet! If you don't like them too bitter, add lime juice and fresh parsley. It's a delight. Another idea... really in vogue... braised endives. This is so easy to make without adding fat.. Simply cook them in veggie stock then fry them until light brown in a hot non-stick pan Be careful not to burn them! Keep adding a little water! If you don't have vegetables on hand to prepare the stock, you can use a cube. You could also add in some diced ham with the endives when braising. An interesting mix!
